Spinach and Cheddar quiche muffins, wrapped in crispy bacon. Perfect for breakfast or brunch!
Ingredients:
  • 12 slices bacon
  • 0.5 medium onion, minced
  • 3 cloves garlic, minced
  • 1 cup 2% milk
  • 5 large eggs
  • 1 cup frozen chopped spinach, thawed and drained
  • 1 cup shredded Cheddar cheese
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C).
  • Arrange bacon slices in a single layer on a bacon rack or on a foil-lined, rimmed baking sheet, ensuring there is no overlapping.
  • Bake in the preheated oven until golden and crispy, for about 10 to 11 minutes. Place bacon slices on a paper towel-lined plate to drain.
  • Preheat the oven to 425 degrees F (220 degrees C) and generously grease a 12-cup muffin tin with rendered bacon fat.
  • Cook sliced onion and minced garlic in a small amount of bacon fat on medium heat until they are soft and translucent, which should take around 5 minutes. Take the pan off the heat.
  • In a mixing bowl, use an electric mixer to beat milk, eggs, and cream until fluffy. Incorporate spinach, Cheddar cheese, and the cooked onion mixture. Season with salt and pepper, then mix with a spatula to combine.
  • Wrap each muffin cup with a slice of bacon forming a ring, then fill the center of each ring with the egg mixture.
  • Bake until a toothpick inserted in the centers comes out clean, around 15 minutes in the preheated oven.
