Colorful and savory spinach and bacon egg casserole, a hearty brunch favorite.
Ingredients:
  • 0.5 pound bacon
  • 1 red bell pepper, chopped
  • 0.25 cup minced onion
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 8 large eggs
  • 0.75 cup whole milk
  • 1 teaspoon garlic salt
  • 0.25 teaspoon ground black pepper
  • 0.5 cup shredded Monterey Jack cheese
  • 0.25 cup finely shredded Asiago cheese
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 9x13-inch baking pan.
  • In a large skillet over medium-high heat, cook bacon until crispy and browned evenly, about 10 minutes. Drain on paper towels, chop, and set aside.
  • Cook bell pepper and onion in the skillet until tender, about 5 to 10 minutes over medium-high heat. Arrange spinach in the baking pan, then layer with bacon and the bell pepper mixture.
  • Whisk eggs in a bowl, then stir in milk, garlic salt, and pepper until blended. Pour mixture over bacon, then top with Monterey Jack and Asiago cheeses.
  • Bake until a knife in the center comes out clean, 35-45 minutes in the preheated oven.
