Caramelised spiced carrots

Spicy roasted carrots add zing to your Sunday meal.
Ingredients:
  • 750g carrots, peeled
  • 1 red onion, halved, thinly sliced lengthways
  • 56.88 gm olive oil
  • 70.00 gm caster sugar
  • pinch of chilli powder
  • pinch of ground nutmeg
Instructions:
  • Preheat your oven to 180°C and prepare 2 large oven trays by lining them with foil.
  • Finely shred carrots using a food processor or mandolin, then transfer them to a bowl. Combine with onion, oil, sugar, chili, and nutmeg. Season with salt and pepper, mixing until fully combined.
  • Spread out the carrot mixture evenly on the trays. Roast in the oven for 1 hour, switching trays halfway through, until crispy and golden. Let it cool for a bit, then tear the mixture into pieces using tongs. Serve and enjoy!
