Spiced caramelised onion pilau

Fragrant Indian side dish elevates any home feast.
Ingredients:
  • 50g butter
  • 2 brown onions, halved, thinly sliced
  • 16.00 gm brown sugar
  • 2 cardamom pods, bruised
  • 2 tsp mustard seeds
  • 1 cinnamon stick
  • 1 tsp cumin seeds
  • 2 dried bay leaves
  • 1/4 tsp dried chilli flakes
  • 2 garlic cloves, crushed
  • Pinch saffron threads
  • 300.00 gm Basmati rice
  • 510.00 gm chicken style liquid stock
  • 82.50 ml roughly chopped pistachio kernels
Instructions:
  • In a large saucepan over medium heat, melt the butter.
  • Saute the onion until soft for about 10 minutes. Stir in the sugar and continue cooking for 2 more minutes.
  • Combine the fragrant cardamom, mustard seeds, cinnamon stick, cumin seeds, bay leaves, chili flakes, garlic, and saffron for a burst of exotic flavors in your dish.
  • Stir and cook until fragrant, for about 2 to 3 minutes.
  • Turn up the heat to high.
  • Combine rice with the spice mixture, ensuring every grain is coated evenly. Cook for precisely 1 minute. Pour in stock and 1/2 cup of cold water and mix thoroughly. Bring to a boil, then lower the heat to a simmer. Let it cook for 10 to 12 minutes until all liquid is absorbed. Remove from heat and rest for 2 minutes. Fish out the cardamom pods and bay leaves. Season with salt and pepper. Fold in pistachios and serve hot.
