Caramelized onion and spice-infused brown rice and lentil dish - a flavorful vegetarian delight!
Ingredients:
  • 1 large onion, chopped
  • 3 cloves garlic, chopped
  • 1 teaspoon chopped fresh ginger root
  • 1 cup brown rice
  • 1 cup green lentils
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon ground cinnamon
  • 2.5 cups water
Instructions:
  • In a pot over medium heat, sauté onion and garlic in olive oil until onion softens, about 5-7 minutes. Stir in ginger until fragrant, about 1 minute. Add brown rice and coat with oil.
  • Mix lentils, cumin, salt, black pepper, and cinnamon into the rice mixture and add enough water to cover it. Cover the pot with a lid and simmer on low heat for about 45 minutes until the lentils are tender and the rice has absorbed the water.
