Satisfy the whole family with a fusion twist - Chicken Helper® chicken fried rice and rotisserie chicken stuffed in tortillas for a delicious dinner!
Ingredients:
  • 2 1/4 cups hot water
  • 1 box Chicken Helper™ chicken fried rice
  • 3 cups coleslaw blend (from 1-lb bag)
  • 2 cups cubed (1/4 to 1/2 inch) deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
  • 1/2 medium red bell pepper, cut into thin strips
  • 1 tablespoon vegetable oil
  • 2 eggs
  • 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count)
  • 1/4 cup sliced green onions (4 medium)
Instructions:
  • In a large skillet, combine hot water, seasoning mix, and uncooked rice from the Chicken Helper box. Bring to a boil, stirring occasionally. Reduce heat, cover, and simmer for about 20 minutes, stirring once, until the rice is tender and the liquid is absorbed. If not fully absorbed, increase heat to medium and cook uncovered for an additional 2 minutes.
  • Turn up the heat to medium. Mix in coleslaw blend, chicken, and bell pepper. Push the rice mixture to one side of the skillet. Add 1 tablespoon of oil to the other side of the skillet and heat it. Cook scrambled eggs in the oil until done, then take off the heat. Combine the eggs with the rice mixture.
  • Follow the package's instructions to heat the tortillas. Then, generously spoon 3/4 cup of the rice mixture down the center of each tortilla and top with green onions. Roll them up tightly.
