Quick and flavorful weeknight curry with South Asian spices. Ready in 30 minutes with only 2 easy steps. Perfect for the whole family with rice and naan on the side!
Ingredients:
  • 18.20 gm olive oil
  • 500g Pork Regular Mince
  • 1 red onion, cut into thin wedges
  • 60g (¼ cup) gluten-free tikka masala curry paste
  • 4cm-piece ginger, peeled, finely grated
  • 400g can cherry tomatoes
  • 270ml can coconut milk
  • 400g can brown lentils, rinsed, drained
  • 60g baby spinach
Instructions:
  • Heat oil in a frying pan over medium heat. Cook the pork for 5 minutes until browned, breaking up any lumps with a wooden spoon. Push pork to one side of the pan and add the onion to the other side. Cook for 3-4 minutes until onion softens slightly, stirring occasionally.
  • Combine pork and onion, then mix in curry paste, ginger, and garlic. Stir and cook until fragrant. Pour in tomatoes and coconut milk, stir and heat through. Finally, add lentils and spinach, stir and cook until heated through and spinach is wilted slightly.
