Elevate your week with a flavorful pork curry.
Ingredients:
  • 18.40 gm vegetable oil
  • 1 tsp black mustard seeds
  • 1 large onion, coarsely grated
  • 112.00 gm (1/3 cup) tikka masala curry paste
  • 600g lean pork strips
  • 165ml can light coconut milk
  • 250ml chicken stock
  • 4 small zucchini, cut into batons
  • 125.00 ml roughly chopped coriander leaves
  • 800.00 gm steamed Basmati rice, to serve
Instructions:
  • 1. Heat oil in a large deep frypan until shimmering. Drop in the mustard seeds and sauté over medium heat until they start to pop, about 30 seconds. Add the onion and cook until softened, stirring occasionally for 3-4 minutes. Mix in the curry paste and cook for another minute. Introduce the pork, stirring to coat it in the flavorful paste. Pour in coconut milk and stock, bring to a gentle simmer, and simmer on low for 5 minutes. Toss in zucchini and continue cooking for an additional 5 minutes until pork is fully cooked and zucchini is tender. Season with sea salt and freshly ground black pepper according to your taste.
  • Plate the curry, garnish with fresh coriander, and accompany with fluffy basmati rice.
