"Cheesy rice and bean stuffed chicken, air-fried to crispy perfection. A surefire hit with the whole family!"
Ingredients:
  • 2 chicken breast fillets
  • 80ml (1/3 cup) chipotle sauce, plus extra to serve
  • 125g (3/4 cup) cooked rice
  • 125g can black beans, drained, rinsed
  • 80g (1 cup) shredded mozzarella
  • 1 green shallot, thinly sliced
  • 170g pkt cheese supreme corn chips
  • 40g (1/4 cup) plain flour
  • Avocado dip, to serve
  • Sliced fresh jalapeno chilli, to serve
  • Fresh coriander leaves, to serve
  • Lime wedges, to serve
Instructions:
  • Halve the chicken breasts horizontally with a sharp knife, then pound them out to a 5mm thickness using a meat mallet.
  • Coat a piece of chicken with 1 tablespoon of chipotle sauce. Add one-quarter of the rice, beans, cheese, and shallot on top. Roll the chicken from the short end to seal, using toothpicks to secure. Repeat the process with the remaining ingredients.
  • Crush the corn chips in a food processor until they form fine crumbs. Transfer them to a plate. In a shallow bowl, whisk the eggs. Spread the flour on a plate. Coat the stuffed chicken in the flour, then dip in the eggs, and finally cover with the corn chip crumbs, pressing gently to coat. Refrigerate for 20 minutes before cooking.
  • Coat the air fryer basket with oil. Then, place the chicken in the basket and air fry at 180C for 12 minutes, flipping halfway through, until fully cooked.
  • Remove toothpicks and plate the chicken with avocado dip, jalapenos, fresh coriander, and lime wedges.
