Whip up delicious breakfast burrito bowls in the air fryer with tortillas, egg, bacon, cheese, avocado, and salsa.
Ingredients:
  • 4 center-cut bacon slices
  • cooking spray
  • 2 (8-inch) flour tortillas
  • 4 large eggs
  • 1/2 cup shredded pepper Jack cheese
  • 3/4 teaspoon adobo seasoning, divided
  • 1/2 teaspoon kosher salt, divided
  • 1 cup cherry tomatoes, halved
  • 1/4 cup chopped fresh cilantro
  • 2 scallions, thinly sliced
  • 2 tablespoons fresh lime juice
  • 1 avocado, diced
Instructions:
  • Prepare all ingredients.
  • Preheat air fryer to 400°F (200°C) for 10 minutes, following manufacturer's guidelines.
  • Prepare the air fryer by lining the basket with aluminum foil. Lay the bacon slices in a single layer and air fry until perfectly crispy, approximately 8 minutes.
  • After air frying, transfer to a paper towel-lined plate. Lower temperature to 325°F (165°C), then grease 2 large ramekins with cooking spray and mold one tortilla into each bowl, ensuring even coverage.
  • Gently crack and nestle 2 eggs into each tortilla shell, then generously sprinkle 1/4 cup of cheese on top of each. Follow by delicately dusting each with 1/8 teaspoon of adobo seasoning and 1/8 teaspoon of salt.
  • Cook the tortilla bowl in the air fryer until crispy, egg whites are set, and yolks are runny, for 13 to 15 minutes.
  • Combine cherry tomatoes, cilantro, scallions, lime juice, remaining adobo seasoning, and salt in a small bowl. Crumble bacon into small pieces and keep it aside.
  • Transfer the tortillas from the bowls to a plate. Evenly distribute the tomato mixture, avocado, and bacon on top of the bowls.
