Breakfast Burrito with Potatoes and Chorizo

Elevate your breakfast with a flavorful burrito filled with potatoes and chorizo. You'll keep craving the delicious flavors!
Ingredients:
  • 1/2 pound Fresh Chorizo
  • 1/2 Poblano Pepper, chopped
  • 1/2 Yellow Onion, Chopped
  • 1/2 Red Bell Pepper, chopped
  • 2 Yukon gold Potatoes, cut into bite-sized pieces
  • 4 large Eggs
  • 1/3 cup Half-and-Half
  • Salt and Pepper to taste
  • 2 Tablespoons butter or Olive Oil
  • 1/4 Cup shredded cheese, any kind
  • 4 burrito-size Flour Tortillas
Instructions:
  • In a large skillet over medium heat, sauté chorizo with poblano pepper, onions, and red bell pepper until vegetables are tender, about 5 to 7 minutes. Remove from heat.
  • Microwave potatoes in a bowl with a little water until fork tender, 7 to 10 minutes, stirring halfway through; then drain and mix into the chorizo mixture.
  • In a large bowl, beat together eggs, half-and-half, salt, and pepper until smooth.
  • In a skillet over medium heat, melt butter until sizzling. Pour in the egg mixture and scramble until perfectly cooked, which should take about 3 minutes. Take the skillet off the heat and gently mix in the cheese until wonderfully melted.
  • Spread chorizo mixture in a line down the center of a tortilla, top with scrambled eggs, fold in the sides, and roll to create a delicious burrito.
