Satisfy your morning cravings with a hearty chorizo breakfast burrito bursting with scrambled eggs, cheese, and onions in a cozy flour tortilla. Perfect hangover remedy.
Ingredients:
  • cooking spray
  • 0.75 pound chorizo sausage, casings removed and crumbled
  • 0.5 cup chopped red onion
  • 1 green chile pepper, seeded and diced
  • 4 large eggs
  • 4 flour tortillas
  • 1 cup shredded Cheddar cheese
Instructions:
  • Spray a large frying pan generously with cooking spray. Brown and crumble chorizo over medium-high heat. Add onion and chile pepper, cook until onion is tender, stirring occasionally.
  • In a medium bowl, whisk eggs until light and foamy, then fold them into the savory chorizo mixture. Lower the heat to medium-low and gently scramble the eggs until perfectly cooked and no longer liquid.
  • Place flour tortillas in the microwave and heat for 30 seconds until warm. Fill each tortilla with the chorizo-egg mixture and sprinkle shredded Cheddar cheese on top. Roll up the tortillas like burritos.
