Air Fryer Mini Breakfast Burritos

Quick and delicious air-fried chorizo and potato breakfast burritos - perfect for busy mornings!
Ingredients:
  • 0.25 cup Mexican-style chorizo
  • 1 tablespoon bacon grease
  • 0.5 cup diced potatoes
  • 2 tablespoons chopped onion
  • 1 serrano pepper, chopped
  • salt and ground black pepper to taste
  • 4 (8 inch) flour tortillas
  • avocado oil cooking spray
Instructions:
  • In a large skillet over medium-high heat, sizzle chorizo, stirring often, until deeply crimson, about 6 to 8 minutes. Transfer out of the skillet.
  • Heat the bacon grease in the skillet over medium-high heat until melted. Cook diced potatoes, stirring occasionally, for 8 to 10 minutes. Add onion and serrano pepper and cook until potatoes are fork-tender, onion is translucent, and serrano pepper is soft, for 2 to 6 minutes. Stir in eggs and chorizo until cooked and fully mixed with the potatoes, for about 5 minutes. Season with salt and pepper to taste.
  • Heat tortillas in a skillet or over a gas stove until soft. Spoon 1/3 cup chorizo mixture down the center of a tortilla. Fold and roll into a burrito. Lightly spray with cooking oil and air fry. Repeat with remaining burritos.
  • Air-fry the burritos at 400°F (200°C) for 4-6 minutes, then flip them over, mist with cooking spray, and air-fry for an additional 2-4 minutes until lightly browned.
