Make-ahead breakfast burritos packed with sausage, eggs, potatoes, cheese, and salsa verde for a delicious and convenient weekday morning meal!
Ingredients:
  • 1 pound sweet pork sausage
  • 2 to 3 medium Yukon potatoes, diced (about 3 cups; no need to peel them)
  • 1 green pepper, diced
  • 1 medium yellow onion, diced
  • 8 ounces mild or sharp cheddar cheese, grated
  • 1 tablespoon butter
  • 8 large eggs
  • Salt and pepper
  • 1 cup salsa verde, homemade or store-bought
  • 8 large burrito-sized flour tortillas
Instructions:
  • Brown the pork sausage in a large skillet over medium heat, breaking it up as you cook. Transfer the cooked sausage to a bowl once evenly browned.
  • Sauté the vegetables: In the skillet with the cooked pork, add the potatoes and cook until tender and lightly browned, about 8-10 minutes, stirring occasionally. If needed, drizzle a bit of olive oil. Stir in the diced peppers and onions and cook until softened. Season with salt and pepper, then remove from heat.
  • Prepare the scrambled eggs: Melt the butter in a nonstick skillet over low heat. Whisk eggs in a medium bowl and pour into the skillet. Cook until eggs are scrambled and just set. Take off heat and set aside (you can do this while the vegetables are cooking to save time!).
  • Lay out a flour tortilla, add pork sausage, potato filling, cheddar cheese, eggs, and salsa verde, ensuring you have enough for eight burritos.
  • Wrap the burritos: Fold the sides over the filling and tightly roll the tortilla into a burrito. Wrap each burrito in foil. Repeat for all burritos.
  • To freeze the burritos, place the foil-wrapped burritos in a large, freezer-safe, resealable plastic bag. Freeze for up to three months. For best results, freeze the burritos even if you plan to eat them the same week to maintain their texture and prevent sogginess.
  • To reheat the burritos, unwrap them from the foil and microwave on high for 4 to 5 minutes, flipping halfway through. If desired, serve with extra salsa verde. For a bonus crispy touch, transfer the reheated burrito to a small nonstick skillet over medium heat and crisp up each side for 2 to 3 minutes. This will guarantee a perfect crunch and eliminate any sogginess!
