Make-ahead veggie breakfast burritos - freeze and reheat for a convenient on-the-go meal anytime!
Ingredients:
  • 2 tablespoons olive oil, divided
  • 1 small onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 jalapeno peppers, chopped
  • 1 clove garlic, minced, or more to taste
  • 1 (15 ounce) can black beans, rinsed and drained
  • 2 tablespoons chopped fresh cilantro
  • 6 large eggs
  • 0.25 cup milk
  • 1 (12 ounce) bag shredded Mexican cheese blend, divided
  • 12 (10x10-inch) sheets aluminum foil
  • 12 (10 inch) flour tortillas
Instructions:
  • Heat 2 large frying pans each with 1 tablespoon of olive oil.
  • Saute onion, bell peppers, jalapenos, and garlic until tender. Stir in black beans and cilantro; cook for an additional few minutes.
  • In a small bowl, combine eggs, milk, and 1/2 cup Mexican cheese. Pour the mixture into another frying pan. Cook the eggs until just set, about 3 to 4 minutes. Mix in vegetables and season with salt and pepper.
  • Gently wipe the frying pan with a paper towel to clean it. Heat up each tortilla in the pan over low heat.
  • Place each tortilla on a sheet of foil. Sprinkle about 1 tablespoon of the remaining cheese in the center of each tortilla, followed by approximately 2 large tablespoons of the filling. Roll the burritos by folding in the sides first and rolling away from you while securing the filling. Wrap the burritos in foil and freeze them all together in a zip-top bag.
