Delicious make-ahead egg white casserole with turkey sausage, veggies, and melted Cheddar - perfect for weekday breakfasts.
Ingredients:
  • 1 serving cooking spray
  • 1 (32 ounce) container egg whites
  • 0.33333334326744 cup nonfat plain Greek yogurt
  • 1 pinch salt and ground black pepper to taste
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1 small onion, chopped
  • 2.5 cups cooked turkey sausage crumbles (such as Jimmy Dean®)
  • 1 plum tomato, chopped
  • 2 cups shredded Cheddar cheese
Instructions:
  • Heat your oven to 350 degrees F (175 degrees C) and generously coat a casserole dish with nonstick cooking spray.
  • In a bowl, combine whisked egg whites, yogurt, salt, and pepper until smooth. Transfer the mixture into the prepared dish.
  • Bake in the preheated oven for around 10 minutes until it begins to set.
  • In a pan, cook mushrooms and onion until soft, for 5 to 10 minutes. Spread the cooked mushroom mixture, sausage crumbles, and tomato over the partially baked egg layer, then top with Cheddar cheese.
  • Bake until the eggs are fully cooked and the cheese is gooey and bubbly, about 10 to 15 minutes.
