Puffy egg white bites with veggie topping, perfect for a quick and tasty snack.
Ingredients:
  • cooking spray
  • 2 cups egg whites
  • 0.33333334326744 cup Greek yogurt
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon onion powder
  • 0.25 teaspoon dried oregano
  • 0.125 teaspoon cayenne pepper
  • 1 cup finely chopped red bell pepper
  • 1 cup finely chopped fresh spinach
  • 0.5 cup shredded sharp Cheddar cheese
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and generously grease a 12-cup muffin tin with cooking spray.
  • Combine egg whites, yogurt, salt, black pepper, garlic powder, onion powder, oregano, and cayenne in a bowl, whisking until smooth. Add red bell pepper, spinach, and Cheddar, and mix well. Fill each of the 12 muffin cups almost to the top with the mixture.
  • Bake in the oven until the egg bites puff up and turn golden brown, about 20-25 minutes. Let cool for 5 minutes; they will shrink slightly. Run a knife along the edges and bottoms to release from the cups. Allow to cool to room temperature before serving.
