Elegant treats perfect for tea time or hosting guests.
Ingredients:
  • 161.25 gm caster sugar
  • 3 egg whites
  • 4.40 gm vanilla extract
  • Blue, yellow and green food colouring
  • 150g dark chocolate, chopped
  • Green, blue and yellow sprinkles, to decorate
Instructions:
  • Preheat your oven to 200C (180C fan-forced) and prepare 3 large baking trays by greasing and lining them with baking paper.
  • Spread a generous layer of sugar evenly on the prepared tray. Bake for 5 minutes or until the sugar edges begin to melt slightly. Remove from the oven and lower the temperature to 100C/80C fan-forced.
  • 1. In a clean bowl, whip egg whites with an electric mixer until soft peaks form. 2. While mixing, slowly add sugar in a steady stream. Beat for 5 to 6 minutes until sugar is dissolved. 3. Mix in the vanilla until well combined. 4. Divide the meringue into 3 separate bowls. 5. Color one bowl blue, another yellow, and the final bowl green using food coloring.
  • Fill a piping bag with the mixture using a 1cm fluted nozzle. Pipe mixture onto 2 prepared trays in 4cm circles, spacing them 2cm apart. Repeat with the rest of the mixture. Bake for 45 minutes until firm. Turn off the oven and let them cool inside with the door closed.
  • Place the chocolate in a microwave-safe bowl and heat on HIGH in 30-second intervals, stirring with a metal spoon until melted completely, about 1 to 1 1/2 minutes. Allow the melted chocolate to cool for 10 to 15 minutes.
  • Lay a sheet of baking paper on a board. Pour assorted sprinkles into separate bowls. Dip the bases of meringues into chocolate, then into sprinkles to coat. Transfer to the baking paper and let them stand for 20 minutes or until set. Serve and enjoy!
