Indulge in homemade honeycomb - the ultimate sweet treat!
Ingredients:
  • 285.95 gm caster sugar
  • 117.98 gm honey
  • 53.60 gm golden syrup
  • 3.75 gm bicarbonate of soda
  • 180g block dark chocolate, melted
Instructions:
  • Prepare a 18cm x 28cm rectangular slice pan by greasing it and lining the base and sides with baking paper, ensuring the paper extends 2cm above the edges of the pan.
  • In a medium saucepan over medium-low heat, combine sugar, honey, golden syrup, and 1/2 cup cold water. Stir and cook for 10 minutes until the sugar has dissolved (avoid boiling).
  • Raise heat to medium and bring to a rolling boil. Let it boil undisturbed for 15 minutes until the temperature reaches hard crack stage on a candy thermometer (146°C to 150°C). Remove from heat and let it sit for 1 minute to allow bubbles to settle.
  • Once you've mixed the ingredients, sprinkle bicarbonate of soda over the mixture and stir well. Transfer the mixture into the pan and spread it evenly with a spatula to flatten quickly (it will start to set fast). Let it sit untouched for 3 hours until firm.
  • Transfer the honeycomb onto a board and slice into pieces. Dip one end of each honeycomb piece into chocolate, then place them on a tray lined with baking paper. Allow the chocolate to set for 1 hour before serving.
