Wholesome egg white bites packed with creamy feta, fresh spinach, and flavorful roasted red peppers for a satisfying and nutritious meal anytime.
Ingredients:
  • cooking spray
  • 1 (16 ounce) carton liquid egg whites
  • 0.5 cup low-fat cottage cheese
  • 0.25 teaspoon garlic powder
  • 0.125 teaspoon ground black pepper
  • 1 cup packed fresh spinach, finely chopped
  • 0.33333334326744 cup roasted red peppers, drained and chopped
  • 1 tablespoon fresh basil, minced
  • 0.25 cup crumbled feta cheese
Instructions:
  • Preheat the oven to 350°F (175°C) and generously coat a 12-cup muffin pan with cooking spray.
  • Blend egg whites, cottage cheese, garlic powder, salt, and pepper in a blender until smooth, approximately 15 seconds.
  • In a bowl, mix together spinach, roasted red peppers, and basil. Pour in the egg mixture and stir until well combined.
  • Fill the muffin cups evenly with the mixture, leaving them about 3/4 full.
  • Sprinkle 1 teaspoon of feta cheese on top of each muffin.
  • Place the egg white bites in the preheated oven and bake until set, around 18 to 20 minutes.
