Wholesome whole wheat crepes filled with fresh berries and light ingredients.
Ingredients:
  • 0.5 cup whole wheat flour
  • 2 egg whites
  • 0.5 cup skim milk
  • 0.5 cup mixed frozen berries, thawed and drained
  • 1 tablespoon confectioners' sugar for dusting
Instructions:
  • In a large bowl, combine wheat flour, egg whites, milk, salt, and oil and whisk until smooth.
  • Spray a skillet with cooking spray over medium heat. Pour 1/4 cup of batter into the skillet and swirl to spread. Cook until lightly browned on the bottom, around 2 minutes. Flip the crepe, add 2 tablespoons of mixed berries in the center, and cook for another 2 minutes. Fold in half, transfer to a plate, dust with confectioners' sugar, and serve.
