Basic lemon and sugar crepes

Indulge in crowd-pleasing lemon and white sugar crepes.
Ingredients:
  • 150g plain flour
  • Pinch of salt
  • 310ml milk
  • 15g butter, melted
  • White sugar, to serve
  • Lemon wedges, to serve
Instructions:
  • In a spacious mixing bowl, create a well in the center of the sifted plain flour and add a pinch of salt.
  • Combine the eggs, milk, and melted butter in a separate bowl using a balloon whisk.
  • Whisk the milk mixture into the flour gradually until smooth and well combined. Cover and refrigerate for 30 minutes.
  • Preheat a 18-20cm crepe pan or small frying pan over medium heat and lightly coat with butter. Pour 1/4 cup (60ml) of crepe batter into the pan, swirl to coat, and cook for 2 minutes until golden and lacy. Flip and cook for another 30 seconds. Transfer to a plate and continue with the remaining batter. Serve with a sprinkle of white sugar and a lemon wedge.
