Quick and easy vegan dessert using summer berries and stone fruit, made in minutes in the microwave.
Ingredients:
  • 1 lemon, halved
  • 500g fruit (remove stone or stalk and chop fruit)
  • 335g white sugar
Instructions:
  • Squeeze the juice from the lemon and add it along with the lemon rind halves and fruit to a large microwave-safe bowl. Microwave on High power, stirring occasionally, for 6 minutes.
  • Stir in the sugar and cook on High/100% power for 20 minutes, or until the jam sets. To check for readiness, chill a saucer, place a small amount of jam on it, then run your finger through it. If the jam wrinkles and holds its shape, it's ready to be jarred.
  • Remove the lemon rind and transfer the hot jam into a fresh jar. Flip the jar for 2 minutes, then allow it to cool right side up.
