Make a quick and easy twist on Aussie classic apricot chicken by combining chicken tenderloins, apricot jam, and microwave brown rice - no knife needed!
Ingredients:
  • 18.20 gm Classic Olive Oil
  • 500g chicken tenderloins
  • 250g jar apricot jam
  • 21.00 gm light soy sauce
  • 40.00 ml sriracha chilli sauce
  • 20.00 ml rice wine vinegar
  • Fresh coriander sprigs, to serve
  • Coles Microwave Rice Brown, to serve
  • Zucchini noodles, steamed, to serve
Instructions:
  • In a large frying pan over high heat, heat the oil until shimmering. Cook the chicken for 3 minutes on each side, or until beautifully golden. Transfer the chicken to a plate.
  • Lower the heat and introduce the jam, soy sauce, sriracha, and vinegar to the pan. Stir and cook until the jam is melted and the mixture turns sticky. Add the chicken back to the pan and coat it evenly.
  • Serve the chicken garnished with fresh coriander alongside rice and zucchini.
