Quick and delicious Asian beef with nutritious edamame, ready in 10 minutes.
Ingredients:
  • 1 brown onion
  • 2 garlic cloves
  • 1 long fresh red chilli
  • 400g pkt podded frozen edamame
  • 12.00 gm sesame seeds
  • 18.20 gm peanut oil
  • 500g beef mince
  • 450g pkt microwave brown rice
  • 2 tsp Ginger Paste
  • 80ml (1/3 cup) kecap manis
  • Fresh coriander sprigs, to serve
Instructions:
  • Preheat a wok or large frying pan over high heat and boil water in the kettle.
  • Prepare the onion into large wedges, crush the garlic, and slice the chili while the wok and kettle heat up.
  • Pour boiling water over the edamame in a heatproof bowl to cover them.
  • Heat up the wok until it's piping hot, then toast the sesame seeds by tossing them for about a minute until they're nice and toasted. Transfer them to a plate. Next, add oil to the wok followed by the beef. Stir-fry for a minute, using a wooden spoon to break up any lumps. Then add the onion and continue to stir-fry for 2-3 minutes until golden brown.
  • Microwave the rice according to the instructions on the packet.
  • Combine the ginger paste and garlic in the wok and mix well. Pour in the kecap manis and stir-fry for 2 minutes until the sauce thickens and coats the beef evenly.
  • Drain the edamame and add to the wok, tossing to combine with the other ingredients. Serve the rice and beef mixture in individual bowls, then sprinkle with sesame seeds, coriander, and chili before serving.
