Chinese beef brisket casserole bursting with exotic aromas and fabulous flavors.
Ingredients:
  • 2 shallots, finely chopped
  • 2 tsp sesame oil
  • 10.60 gm soy sauce
  • 20.00 ml finely chopped fresh ginger
  • 1.5kg rolled beef brisket pot roast
  • 18.20 gm peanut oil
  • 60ml sherry
  • 125ml beef stock
  • 2 cinnamon sticks, broken
  • 62.50 ml Roses Sweet Orange Marmalade
  • Steamed white rice, to serve
  • Asian greens, to serve
Instructions:
  • Preheat the oven to 140°C. In a small bowl, mix together shallots, garlic, sesame oil, soy sauce, and ginger until well combined. Remove string from brisket, unroll it, then evenly spread the shallot mixture over the flesh, leaving a 2cm border on all sides. Roll up tightly to enclose the filling and secure with kitchen string.
  • In a large casserole, brown the meat in hot oil from all sides. Pour in sherry and let it boil until almost gone. Add stock and cinnamon, cover, and place in oven. Cook undisturbed for 2½ hours.
  • Take the casserole out of the oven and set the beef aside, covering it with foil to rest for at least 10 minutes. Meanwhile, heat the casserole over high heat, add marmalade, and simmer until the liquid reduces to ½ cup. Strain the sauce through a fine sieve. Slice the beef, drizzle with the orange sauce, and serve with rice and greens.
