Beef and plum stir-fry

Rich Chinese flavors blend with sweet plums and hoisin sauce for a mouthwatering fusion.
Ingredients:
  • 3 tsp sesame oil
  • 6 small plums, halved, stones removed, cut into thirds
  • 500g beef fillet, thinly sliced across the grain
  • 2cm-piece fresh ginger, finely shredded
  • 2 bunches broccolini, halved
  • 43.20 gm hoisin sauce
  • Steamed white rice, to serve
  • Fresh Thai basil leaves, to serve
Instructions:
  • In a wok over medium heat, heat 1 teaspoon of oil. Add plums and sprinkle with sugar. Cook for 5 minutes, stirring occasionally, until slightly golden. Transfer to a plate.
  • In the wok over medium-high heat, sear the first batch of beef in half of the remaining oil until golden, about 1-2 minutes. Transfer to the plate with plums. Repeat with the remaining beef, reheating the wok between batches.
  • Heat the remaining oil in the wok over medium-high heat, then stir in ginger, garlic, and broccolini stems, cooking for 1 minute. Mix in broccolini florets and stir-fry for another minute until they are vibrant green and tender-crisp.
  • Combine beef, plum mixture, and hoisin sauce in a wok, tossing until heated through and well mixed. Season with pepper, then divide rice and stir-fry among serving dishes. Garnish with basil and serve.
