Ginger Beef Stir Fry

Delicious Beef Stir Fry with ginger, scallions, and a sweet soy marinade.
Ingredients:
  • Marinade
  • 2 tablespoons unseasoned rice vinegar
  • 5 tablespoons soy sauce (use gluten-free soy sauce if cooking gluten-free)
  • 1 tablespoon honey
  • 1 tablespoon peeled, grated fresh ginger
  • 1 teaspoon chile pepper flakes
  • 1 teaspoon ground cumin
  • Beef and stir-fry
  • 1 1 1/4 to 1 1/2 lb top sirloin steak
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil (preferably peanut)
  • 1 tablespoon dark toasted sesame oil (optional)
  • 3-4 green onions, cut on a diagonal, 1/2-inch apart, including the greens
  • 2 cloves garlic, thinly sliced
  • 2-3 hot chilies, preferably red serranos, seeded, sliced
  • 1-inch knob of ginger, peeled, cut lengthwise into matchstick shapes
  • 1/2 cup loosely packed, chopped cilantro
Instructions:
  • Place the steak in the freezer for 30 minutes to firm it up. This will facilitate cutting it into thin strips. Cut the steak crosswise into 1/2-inch thick slices, then slice each piece lengthwise into strips.
  • Prepare the beef marinade by combining soy sauce, vinegar, ginger, honey, red chile flakes, and cumin in a bowl. Thoroughly coat the beef with the marinade and refrigerate for a minimum of 30 minutes, or up to 4 hours.
  • Create a smooth cornstarch slurry by combining cornstarch and 2 tablespoons of cold water in a small bowl.
  • Sear the beef: In a hot wok or large sauté pan, heat the vegetable oil (add dark sesame oil if desired) until nearly smoking. Pat the beef dry and cook in small batches for a quick sear, not more than 1 minute per batch. Transfer beef to a bowl after browning.
  • In the same pan with the cooked beef, quickly stir-fry the chilies and garlic for 30 to 45 seconds. Then add the julienned ginger and cook for an additional 30 to 45 seconds.
  • Combine beef, cornstarch slurry, scallions: Return beef to pan, then stir in cornstarch slurry and scallions. Cook for 1 minute.
  • Take off the heat, add cilantro: Switch off the stove and fold in the fresh cilantro, then serve immediately with steamed white rice.
