Savory ginger beef stir-fry with tender beef slices, zesty ginger, colorful peppers, and earthy mushrooms for a healthier twist.
Ingredients:
  • 1 pound round steak, thinly sliced
  • 1 (1 inch) piece fresh ginger root, peeled and thinly sliced
  • 1 tablespoon soy sauce
  • 1 teaspoon butter
  • 1 red bell pepper, chopped
  • 1 onion, chopped
  • 12 mushrooms, sliced
  • 0.25 cup sweet and sour sauce
  • 4 cups cooked rice
Instructions:
  • In a bowl, combine steak, ginger, and soy sauce, making sure steak is fully coated. Cover tightly and marinate in the refrigerator for at least 30 minutes or up to overnight.
  • Heat a wok over high heat and add the beef mixture. Cover and cook until the beef is browned, which should take about 5 minutes. Remove the beef from the wok.
  • Melt butter in a wok over high heat. Add bell pepper, onion, mushrooms, and sweet and sour sauce. Cover and cook until vegetables start to soften, around 3 minutes. Mix in cooked beef and heat through for about 2 minutes. Serve over rice.
