Light and flavorful noodle dish for a guilt-free indulgence.
Ingredients:
  • 18.20 gm peanut oil
  • 400g lean beef strips
  • 3cm piece ginger, peeled, finely chopped
  • 2 large white onions, cut into thin wedges
  • 2 large red capsicums, sliced
  • 440g packet fresh, thin hokkien noodles, separated
  • 1 bunch baby bok choy, leaves separated, stems sliced
  • 21.00 gm reduced-salt soy sauce
  • 82.50 ml Thai basil leaves (see tip)
Instructions:
  • Heat a large wok over high heat until smoking hot. Pour in half of the oil, swirling to coat the wok. Add half of the beef and stir-fry for 1 minute until nicely sealed. Transfer to a plate and continue with the remaining oil and beef in the same manner.
  • Add fragrant ginger and aromatic onions to the sizzling wok. Stir-fry until they turn a light golden color. Toss in the colorful capsicum and continue to stir-fry for 2 minutes. Return the succulent beef along with its flavorful juices to the mix. Add in the springy noodles and stir-fry until they are heated through. Introduce the vibrant bok choy and stir-fry until the leaves just start to wilt. Finish off with a drizzle of soy sauce and a sprinkle of fresh basil, stirring everything together to ensure each ingredient is beautifully coated. Serve this delicious dish by spooning it into bowls. Enjoy the explosion of flavors!
