Indulge in a flavorful honey ginger beef salad with organic soba noodles.
Ingredients:
  • 14.40 gm honey
  • 1 tsp finely grated ginger
  • 4 x 120g Beef Fillets (about 480g)
  • 110g Organic Soba Noodles
  • 300g snow peas, trimmed, thinly sliced lengthways
  • 2 bunches asparagus, woody ends trimmed, thinly sliced diagonally
  • 2 carrots, peeled, cut into matchsticks
  • 2 spring onions, thinly sliced diagonally
  • 125.00 ml coriander leaves
  • 10.60 gm lime juice
  • 2.65 gm soy sauce
  • 1 tsp sesame oil
  • 3.00 gm sesame seeds, toasted, to serve
Instructions:
  • Preheat a barbecue or chargrill on high heat. Mix honey and ginger in a small bowl. Coat beef evenly with honey mixture. Grill beef for 2 1/2 minutes on each side for medium-rare or until desired doneness. Rest beef on a plate covered with foil for 5 minutes. Save pan juices. Slice beef thinly across the grain.
  • In a medium saucepan, boil soba noodles for 5 minutes or until tender. Add snow peas and asparagus for the final minute. Rinse the noodle mixture under cold water and drain well.
  • Combine the noodle mixture, carrot, spring onion, and half of the coriander in a large bowl. Drizzle with lime juice, soy sauce, and sesame oil, then toss everything together.
  • Plate the noodle salad, garnish with the rest of the coriander, add the beef on top with its pan juices, and finish by sprinkling with sesame seeds. Enjoy!
