Beef, honey-glazed veg and soba noodle bowl recipe

Japanese-inspired brussels sprouts with sesame seeds - ready in just 25 minutes for a crunchy and nutty dinner delight!
Ingredients:
  • 190g soba noodles
  • 20.00 ml mirin
  • 20.00 ml rice wine vinegar
  • 2.00 tsp finely grated fresh ginger
  • 16.80 gm coconut oil
  • 500g beef steaks (scotch fillet, sirloin or rump)
  • 1 bunch small radishes, quartered
  • 400g small brussels sprouts, halved
  • 6.00 gm mixed sesame seeds
  • Green shallots, shredded, to serve
  • 20.00 ml tamari
  • 2 tsp mirin
  • 1 tsp sesame oil
  • 7.20 gm honey
Instructions:
  • Boil noodles in a large saucepan following packet directions until tender. Then, drain and rinse under cold running water.
  • Prepare the dressing by mixing all ingredients in a bowl and set it aside.
  • In a bowl, mix mirin, vinegar, honey, and ginger. Heat coconut oil in a large non-stick frying pan over medium-high heat. Season steak and cook for 5 minutes for medium or until desired doneness. Transfer steak to a plate, cover, and set aside.
  • In a pan over medium-high heat, heat the remaining oil and add the radish and sprouts. Season and cook for 6 minutes until golden brown. Add the mirin mixture and cook for an additional 2 minutes until glazed and sticky. Stir in half of the sesame seeds and then remove from heat.
  • Thinly slice the steak. Divide the noodles into serving bowls. Top with the radish mixture and sliced steak. Drizzle with dressing and sprinkle with shallot and remaining sesame seeds.
