Get creative with this easy midweek meal: low-fat sweet chili beef noodles.
Ingredients:
  • 80ml soy sauce
  • 44.00 gm Sweet Chilli Sauce
  • 2 tsp sesame oil
  • 2 garlic cloves, finely chopped
  • 1 tsp dried chilli flakes
  • 24.40 gm oyster sauce
  • 500g beef rump steak, trimmed, sliced 5mm-thick
  • 270g ramen noodles or thin egg noodles
  • 200g snow peas, sliced lengthways
  • 200g sugar snap peas
  • 36.80 gm sunflower oil
  • 200g mixed mushrooms (such as enoki and oyster), trimmed, sliced if large
  • 3 spring onions, sliced on an angle
  • 3.00 gm black sesame seeds (see note) (optional)
Instructions:
  • Combine soy sauce, sweet chili sauce, sesame oil, garlic, chili flakes, and oyster sauce in a bowl. Add beef, coat evenly, and marinate for 10 minutes.
  • While the noodles are cooking according to the package instructions, toss in the snow peas and sugar snaps for the last 2 minutes. Drain the noodles and veggies and rinse under cold water.
  • In a wok over medium-high heat, warm the sunflower oil and stir in the beef with the marinade. Cook for 6-8 minutes until done. Add noodles and peas, toss for 1 minute, then mix in mushrooms and continue tossing for 1 more minute until mushrooms are tender. Serve in bowls, and garnish with spring onion and black sesame seeds, if desired.
