Whip up a flavorful beef noodle stir-fry, a simple yet delicious meal perfect for any day!
Ingredients:
  • 400g packet fresh rice noodles
  • 9.20 gm olive oil
  • 400g lean beef strips
  • 1 bunch baby choy sum, washed, leaves separated, cut into 4cm lengths
  • 1 red capsicum, deseeded, cut into thin strips
  • 2.5cm piece ginger, peeled, cut into thin strips
  • 90.75 gm sweet chilli sauce
  • 31.50 gm reduced-salt soy sauce
Instructions:
  • Place noodles in a heatproof bowl and cover with hot water. Let stand for 5 minutes until tender, then drain. Allow to cool slightly and use your fingers to separate the noodles. Set aside.
  • Preheat a wok over high heat until smoking. Add 1 teaspoon of oil followed by half of the beef. Stir-fry for 1 minute until golden brown. Transfer beef to a plate and repeat with the remaining oil and beef.
  • In a sizzling wok, combine choy sum stems, capsicum, garlic, ginger, and 1 tablespoon of water. Stir-fry briefly until veggies are nearly tender. Toss in noodles, beef, and choy sum leaves, stir-frying for another 2 minutes. Drizzle in sweet chili and soy sauces, stir-frying until everything is heated through. Plate up and enjoy!
