Try crispy lettuce cups filled with flavorful fried rice for a fresh twist on a classic dish.
Ingredients:
  • 100.00 gm jasmine rice, cooked, cooled
  • 18.40 gm vegetable oil
  • 500g beef mince (see notes for a vegetarian version)
  • 1/2 cup Kikkoman sweet chilli, ginger and soy marinade and sauce
  • 125.00 ml roughly chopped fresh mint leaves
  • 42.00 gm lime juice
  • 12 iceberg lettuce leaves
Instructions:
  • In a wok or large deep frying pan over high heat, heat oil. Add mince and cook for 6 to 8 minutes, using a wooden spoon to break it up until browned.
  • Combine rice and sauce in a pan and cook for 1 to 2 minutes, stirring occasionally, until rice is warmed. Mix in mint and lime juice. Fill lettuce cups with the rice mixture and serve.
