Beef, broccoli and almond stir-fry

Whip up a quick and delicious beef and rice stir fry for a speedy dinner option.
Ingredients:
  • 215g (1 cup) doongara rice
  • 18.40 gm canola oil
  • 300g lean beef rump steak, thinly sliced across the grain
  • 1 brown onion, halved, cut into thin wedges
  • 120g green beans, topped, diagonally sliced
  • 330g broccoli, cut into florets
  • 40.00 gm water
  • 2 tsp finely grated fresh ginger
  • 22.00 gm sweet chilli sauce
  • 21.00 gm soy sauce
  • 21.60 gm hoisin sauce
  • 40.00 ml toasted slivered almonds
Instructions:
  • Cook the rice in a generously sized saucepan of boiling water for 12-15 minutes, or until perfectly tender. Drain thoroughly.
  • Heat half of the oil in a large wok until smoking. Stir-fry one-third of the beef for 2 minutes until browned. Transfer to a heatproof bowl. Repeat with the remaining beef in 2 more batches, reheating the wok between each batch.
  • Heat the rest of the oil in the wok until it starts to smoke. Toss in the onion, beans, and broccoli, then give a gentle water drizzle. Stir-fry for 5 minutes until beans are vibrant green and just crisp-tender. Toss in garlic, ginger, sweet chilli sauce, soy sauce, and hoisin sauce and stir for a minute until fragrant. Add the beef and stir-fry for another minute until warmed. Take off the heat.
  • Scoop the cooked rice into individual serving bowls. Spoon the delicious beef stir-fry over the rice and garnish with a generous sprinkle of almonds. Serve right away to enjoy the flavors at their best.
