Quick and easy stir-fry with flavorful eggplant and crunchy pak choy for a delicious meal.
Ingredients:
  • 12.20 gm fish sauce
  • 21.00 gm lime juice
  • 4.00 gm brown sugar
  • 2 tsp macadamia or peanut oil
  • 500g extra-lean beef mince
  • 1 red onion, finely chopped
  • 2 tsp finely grated fresh ginger
  • 2 long red chillies, deseeded, finely chopped
  • 1 (about 400g) eggplant, trimmed, cut into 2cm pieces
  • 350g broccoli, cut into florets
  • 40.00 gm water
  • 1 large bunch pak choy, trimmed, cut into 2cm pieces
  • 40.00 ml chopped roasted unsalted peanuts, to serve
  • 250g Uncle Ben's® Microwave Brown Rice, heated following packet instructions, to serve
  • Lime wedges, to serve
Instructions:
  • Combine fish sauce, lime juice, and sugar in a bowl, stirring until the sugar dissolves. Set the mixture aside.
  • In a sizzling wok, sear the beef in half of the oil until golden, breaking up lumps with a wooden spoon. Transfer to a plate and set aside.
  • - In a hot wok, add the rest of the oil and sauté the onion for 2 minutes. - Add garlic, ginger, and chili and stir well until fragrant. - Sauté the eggplant until golden for about 3 minutes. - Toss in the broccoli and water, cook for 2 minutes until tender-crisp. - Finish by adding pak choy and stir-frying for 1 more minute.
  • Add the beef and fish sauce mixture back to the wok, stir-fry until well combined and heated through. Top with peanuts and serve alongside rice and lime wedges.
