Quick and flavorful beef and broccoli stir-fry with oyster sauce - ready in 20 minutes.
Ingredients:
  • 36.80 gm vegetable oil
  • 6 garlic cloves, crushed
  • 300.00 gm jasmine rice
  • 600g beef stir-fry strips
  • 20.00 ml ginger paste
  • 1 long red chilli, thinly sliced
  • 42.00 gm soy sauce
  • 100.65 gm oyster sauce
  • 16.00 gm brown sugar
  • 600g frozen spring vegetable mix
  • 165.00 ml fresh Thai basil leaves
  • 62.50 ml chopped roasted cashews
Instructions:
  • 1. Boil water in a kettle. Heat half of the oil in a medium saucepan over medium-high heat. Add half of the garlic and cook, stirring, for 1 minute until fragrant. Add rice, stir to coat. Pour in 3 cups of boiling water. Reduce heat to low, cover, and simmer for 10 to 12 minutes. Remove from heat and let it stand for 5 minutes until rice is tender and water is absorbed.
  • Combine beef, ginger, garlic, and chili in a bowl. Heat a wok over high heat with oil. Stir-fry half of the beef mixture for 3 minutes until browned. Transfer to a heatproof bowl and cover to keep warm. Repeat with the remaining beef mixture.
  • In a small bowl, mix together soy sauce, oyster sauce, and sugar.
  • Combine vegetable mix and 2 tablespoons of water in the wok, stir-frying for 5 minutes until tender and hot. Add the beef back to the pan along with the sauce mixture, and stir-fry for 2 more minutes until heated through.
  • Add the basil and mix well. Serve the stir-fry with rice, then garnish with cashews and the rest of the chili.
