Speedy mince and noodle stir-fry

Create a delicious stir-fry with minced meat, colorful vegetables, and tender noodles for a quick and satisfying weeknight meal.
Ingredients:
  • 450g fresh hokkien noodles
  • 27.30 gm peanut oil
  • 500g Beef 3 Star Regular Mince
  • 1 brown onion, halved, cut into thin wedges
  • 300g broccoli, cut into small florets
  • 115g baby corn, thinly sliced diagonally
  • 1 carrot, halved, thinly sliced diagonally
  • 1 small red capsicum, cut into 1cm pieces
  • 65.63 gm soy sauce
  • 70.63 gm barbecue sauce
  • 1 tsp sesame oil
  • 2 green onions, thinly sliced diagonally
Instructions:
  • Place the noodles in a heatproof bowl and cover them with boiling water. Let them stand for 2 to 3 minutes until tender. Use a fork to separate the noodles and then drain them.
  • Heat a wok over high heat and add 1 tablespoon of peanut oil, swirling to coat. Add the mince and cook for 8 minutes, stirring to break up the meat until browned. Transfer the cooked mince to a bowl, leaving behind any excess fat. Add the remaining 1/2 tablespoon of peanut oil to the wok, swirling to coat, then stir-fry the brown onion and garlic for 1 minute.
  • Combine broccoli, corn, carrot, and capsicum in the wok. Stir-fry until tender, about 3 to 4 minutes. Add the cooked mince back into the wok. Pour in soy sauce, barbecue sauce, and sesame oil. Stir-fry for an additional minute. Toss in the noodles and green onion, stir-fry until well combined. Serve and enjoy!
