Cheesy one pot meal with beef, haloumi, and spinach ready in 25 minutes - a sure family favorite!
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 500g lean beef mince
  • 1 leek, white part only, sliced
  • 3 garlic cloves, crushed
  • 1 tsp dried oregano
  • 350g jar roasted vegetables stir-through pasta sauce
  • 400g can cherry tomatoes in juice
  • 100g baby spinach
  • 225g packet haloumi cheese, cut into 1cm-thick slices
  • 125.00 ml grated mozzarella
  • Fresh basil leaves, to serve
  • Crusty bread, to serve
Instructions:
  • Heat up the grill on high.
  • In a large flameproof frying pan over high heat, heat oil. Add mince and cook for 5 minutes until browned, breaking it up with a wooden spoon. Stir in leek, garlic, and oregano and cook for 3 minutes until leek softens. Add pasta sauce, tomatoes, and 1/2 cup of water. Bring to a simmer and cook for 2 minutes until slightly thickened. Finish by adding spinach and remove from heat.
  • Lay the haloumi on top of the mince mixture and sprinkle with mozzarella. Grill for 2 to 3 minutes until the cheese is golden. Top with fresh basil leaves and serve with bread.
