Whip up a delicious red curry beef noodle stir-fry for a speedy and tasty post-work dinner.
Ingredients:
  • 110g pkt Suimin Noodles with Red Curry Beef Flavour
  • 1 small brown onion, finely chopped
  • 250g 3 Star Beef Mince
  • 1 carrot, peeled, cut into matchsticks
  • 1 bunch choy sum, coarsely chopped
  • 2 spring onions, thinly sliced diagonally
  • Coriander leaves, to serve
Instructions:
  • Follow packet instructions to cook noodles and vegetables. Set aside the flavor paste sachet. Drain noodles, saving 1/4 cup (60ml) of the liquid.
  • Heat oil in a wok or large frying pan over high heat. Cook onion and beef, stirring, for 5 minutes until beef is cooked through. Stir in flavor paste sachet and cook for 1 minute until fragrant.
  • Stir-fry carrot and choy sum in the wok until softened, about 2 minutes. Add noodles, reserved liquid, and spring onion. Stir everything together until well combined. Serve in bowls and garnish with fresh coriander.
