Homemade Thai red curry beef with fresh pineapple for a delicious twist on take-out.
Ingredients:
  • 9.20 gm peanut oil
  • 750g Beef Rump Steak, trimmed, cut into 3cm pieces
  • 100g curry paste
  • 400ml coconut milk
  • 24.40 gm fish sauce
  • 20.00 ml palm sugar
  • 21.00 gm lime juice
  • 400g fresh pineapple, peeled, cored, chopped into 3cm pieces
  • 100g snow peas, trimmed
  • 1 red capsicum, seeded, thinly sliced
  • Steamed jasmine rice, to serve
  • Coriander leaves, to serve
Instructions:
  • In a sizzling hot wok, sear batches of beef for 2-3 mins until beautifully browned. Plate and set aside.
  • Sauté curry paste in the wok over medium heat until aromatic. Pour in coconut milk, fish sauce, palm sugar, lime juice, and pineapple. Allow to simmer for 5 minutes. Add beef, snow peas, and capsicum to the wok and cook for an additional 3 minutes.
  • Garnish the curry with fragrant jasmine rice and fresh coriander leaves.
