Thai-inspired slow cooker beef with coconut milk, red curry paste, and spinach for a flavorful and easy meal.
Ingredients:
  • 2 pounds lean stew beef
  • 0.125 teaspoon salt
  • 2 cups diced onion
  • 4 cloves garlic, minced
  • 1 (13.5 ounce) can coconut milk
  • 0.75 cup beef broth
  • 3 tablespoons red curry paste
  • 2 tablespoons lime juice
  • 2 tablespoons peanut oil
  • 2 jalapeno chile peppers, seeded and minced
  • 1 tablespoon brown sugar
  • 2 cups baby spinach
  • 8 water
  • 4 cups jasmine rice
  • 0.5 cup fresh basil leaves
Instructions:
  • Preheat a large skillet until sizzling hot. Sear beef until golden brown on both sides for about 2 minutes each. Remove any excess grease. Transfer beef to a 4-quart slow cooker and season with salt.
  • Saute the onion and garlic in a skillet over medium-high heat until tender, approximately 5 minutes. Transfer to the slow cooker with the beef.
  • Combine coconut milk, beef broth, red curry paste, lime juice, peanut oil, jalapeno chile peppers, and brown sugar in the slow cooker and stir well.
  • Allow the ingredients to meld together on Low heat for 6 to 10 hours.
  • In a saucepan, bring water and rice to a boil. Lower the heat, cover, and simmer for 20 to 25 minutes until the rice is tender and the liquid is absorbed.
  • Mix in fresh spinach with the contents in the slow cooker and let it cook until it wilts which should take approximately 15 minutes. Serve the savory beef blend on top of a bed of rice and decorate with fragrant basil leaves.
