Transform your roast beef leftovers into a delicious veggie-packed pie.
Ingredients:
  • 1 pound cooked beef, chopped (about 2 cups)
  • 1/4 cup chopped green onions
  • 1 box (9 oz) Frozen Broccoli Cuts, thawed
  • 1 jar (4 oz) sliced mushrooms, drained
  • 1/2 cup Original Bisquick™ mix
  • 1 cup milk
  • 1/4 cup sour cream
  • 2 eggs
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup shredded Swiss cheese
Instructions:
  • Preheat oven to 400° F. Grease a 9-inch pie plate. Combine beef, onions, broccoli, and mushrooms in a medium bowl, then transfer the mixture into the pie plate.
  • Combine Bisquick mix, milk, sour cream, eggs, salt, and pepper in a bowl and stir until smooth. Transfer the mixture to a pie plate and sprinkle with cheese on top.
  • Bake for 30 to 35 minutes until a knife inserted in the center comes out clean. Allow it to cool for 5 minutes before garnishing with parsley, if desired.
