Impossibly Easy Mini Greek Burger Pies

Try these savory Greek pies filled with seasoned ground beef, onion, and bell pepper, all enveloped in a flaky Original Bisquick® crust.
Ingredients:
  • 1 lb lean (at least 80%) ground beef or ground lamb
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup diced roasted red bell peppers (from 16-oz jar)
  • 1/2 cup feta cheese, crumbled (2 oz)
  • 1/2 cup Original Bisquick™ mix
  • 1/2 cup milk
  • 2 eggs
Instructions:
  • Preheat the oven to 375°F and generously coat 12 regular-size muffin cups with cooking spray.
  • In a 10-inch skillet over medium-high heat, cook the beef and onion for 5 to 7 minutes until the beef is fully cooked; remember to stir often. Drain any excess fat. Let it cool for 5 minutes before adding red pepper flakes, roasted red peppers, and feta cheese, then stir everything together.
  • In a medium bowl, whisk together the baking mixture ingredients until well blended. Spoon a generous tablespoon of the baking mixture into each muffin cup. Top with around 1/4 cup of the burger mixture. Finish by spooning another tablespoon of the baking mixture over the burger mixture in each muffin cup.
  • Bake for 25 to 30 minutes until a toothpick inserted in the center comes out clean and the tops are golden brown. Allow to cool for 5 minutes. Carefully loosen the sides of the pies from the pan using a thin knife, then place them top side up on a cooling rack. Cool for an additional 10 minutes before serving.
