Impossibly Easy Mini Chicken and Broccoli Pies

Delicious chicken and broccoli pie made with Original Bisquick® mix - perfect family dinner.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 lb boneless skinless chicken breasts, cut into bite-size pieces
  • 1 medium onion, chopped (1/2 cup)
  • 1 cup frozen chopped broccoli, thawed and drained
  • 1/4 teaspoon pepper
  • 1 cup shredded Cheddar cheese (4 oz)
Instructions:
  • Preheat oven to 375°F and grease 12 regular-size muffin cups with cooking spray.
  • Heat oil in a nonstick skillet over medium-high heat then cook chicken for 5 to 7 minutes until no longer pink. Add onion and cook for 2 to 3 minutes. Stir in broccoli, salt, and pepper until heated through. Let it cool for 5 minutes, then gently mix in the cheese.
  • In a medium bowl, whisk together the baking mixture ingredients until well combined. Place a scant tablespoon of the baking mixture into each muffin cup, followed by approximately 1/4 cup of the chicken-broccoli mixture. Finish by adding another tablespoon of the baking mixture on top of the chicken-broccoli mixture in each muffin cup.
  • Bake for around 30 minutes until a toothpick inserted in the center comes out clean and the tops are nicely golden brown. Let them cool for 5 minutes. Using a thin knife, gently loosen the sides of the pies from the pan; carefully remove and place them top side up on a cooling rack. Allow them to cool for an additional 10 minutes before serving.
