Spicy buffalo chicken bites, game day ready in 45 minutes.
Ingredients:
  • 6 tablespoons butter, melted
  • 1/2 cup Frank's™ RedHot™ Original cayenne pepper sauce
  • 1/4 teaspoon seasoned salt
  • 1/4 teaspoon pepper
  • 1 1/2 to 2 cups shredded or chopped cooked chicken
  • 1 cup freshly shredded sharp Cheddar cheese (4 oz)
  • 2 tablespoons ranch dressing or blue cheese dressing, if desired
  • 1/2 cup Original Bisquick™ mix
  • 1/2 cup milk
  • 2 eggs
  • 1/3 cup blue cheese crumbles
  • 4 green onions, chopped (4 medium)
  • 1 bunch fresh cilantro, chopped
Instructions:
  • Preheat oven to 375°F and generously coat 12 regular-size muffin cups with cooking spray.
  • Combine melted butter, hot sauce, seasoned salt, and pepper in a small bowl to create the delicious Buffalo sauce.
  • Combine shredded chicken, Cheddar cheese, and ranch dressing in a medium bowl. Add half to three-quarters of the Buffalo sauce, saving the rest for serving. Mix until well combined.
  • In a medium bowl, mix together the Batter ingredients with a whisk or fork until well combined. Spoon 1 tablespoon of the batter into each muffin cup. Top each with about 1/4 cup of the chicken mixture, then spoon another tablespoon of batter over the chicken in each muffin cup.
  • Bake for approximately 30 minutes or until toothpick inserted in the center comes out clean and tops are golden brown. Let cool for 5 minutes, then gently loosen sides of pies from pan and remove onto a cooling rack, top sides up. After another 5 minutes of cooling, transfer the pies to a serving tray.
  • Sprinkle blue cheese, green onion, and cilantro on top, then drizzle with reserved Buffalo sauce. Serve while warm.
