Easy Mini Pumpkin Pies with fluffy whipped topping are a must-try for any fall or holiday gathering. Made with Original Bisquick™ mix for a quick and delicious dessert that frees up your time for other party preparations.
Ingredients:
  • 1 cup canned pumpkin (not pumpkin pie mix)
  • 1/2 cup Original Bisquick™ mix
  • 1/2 cup sugar
  • 3/4 cup evaporated milk
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 cup Cool Whip frozen whipped topping, thawed, if desired
Instructions:
  • Preheat the oven to 375°F and generously coat a 12-cup muffin tin with cooking spray.
  • Combine all ingredients, excluding the whipped topping, in a medium bowl until well mixed. Divide the mixture evenly, pouring 1/4 cup into each muffin cup.
  • Bake for approximately 30 minutes until muffin tops are a delightful golden brown and the edges gently separate from the pan. Allow to cool for 10 minutes. Using a thin knife, carefully detach the pies from the pan, then place them on a cooling rack with the top sides facing up. Let them cool for an additional 10 minutes before serving with a generous tablespoon of whipped topping.
