Stir-fried sweet chilli chicken

Skip take-out and whip up your own quick and easy Asian-inspired dish at home in no time.
Ingredients:
  • 80ml soy sauce
  • 60ml sweet chilli sauce
  • 20.00 gm caster sugar
  • 40.00 ml rice vinegar
  • 3 x 170g chicken breasts, thinly sliced
  • 450g packet hokkien noodles
  • 60ml sunflower oil
  • 2 garlic cloves, sliced
  • 2 tsp grated ginger
  • 2 bunches broccolini, cut into thirds
  • 1 onion, thinly sliced
  • 1 red capsicum, thinly sliced
Instructions:
  • In a large bowl, mix together soy sauce, chili sauce, sugar, and vinegar. Add chicken and stir thoroughly to coat. Refrigerate for 15 minutes to marinate.
  • Cook the noodles as directed on the packet. Drain the noodles and set them aside, keeping them warm.
  • In a hot wok or large frypan, heat 1 1/2 tablespoons of oil until smoking. Stir-fry chicken in 2 batches for 3-4 minutes each until golden. Set aside chicken and wipe the wok clean with a paper towel.
  • Pour the marinade back into the wok and let it come to a vigorous boil over high heat. Allow it to bubble for 1 minute, then set it aside. Use a paper towel to wipe the wok clean.
  • In a wok, heat the remaining oil over high heat. Stir-fry garlic, ginger, broccolini, onion, and capsicum for 1 minute. Add the chicken and marinade, stir-fry for 2 minutes until heated through. Serve immediately with noodles.
