Baby corn with satay sauce

Enjoy these adorable baby corn cobs raw in salads, stir-fries, curries, or as a delightful nutty side dish.
Ingredients:
  • 250g baby corn, halved lengthways
  • 60ml (1/4 cup) reduced-fat coconut milk
  • 31.20 gm crunchy peanut butter
  • 22.00 gm sweet chilli sauce
  • 2.65 gm soy sauce
  • Fresh coriander sprigs, to serve
Instructions:
  • Boil the corn in a small saucepan for 5 minutes or until tender. Drain and transfer to a serving dish. Keep warm by covering with foil.
  • Combine coconut milk, peanut butter, sweet chilli sauce, and soy sauce in a saucepan over medium heat, whisking until smooth. Simmer for 1 minute until sauce boils.
  • Drizzle the flavorful sauce over the corn and sprinkle with fresh coriander leaves.
